BBQ Pulled Jackfruit Sandwich

I am very intrigued with testing out alternative foods and drinks, and creating recipes that anyone can enjoy. I have tried so many meat substitutes and never have I tried one that's texture truly resembles meat 10000% until I tried Jackfruit. It pulls apart exactly like shredded meat and takes on just about any flavor you put onto it. So, why not drench it in BBQ sauce and make a BBQ Pulled Jackfruit Sandwich?!?! 

Below, I have a homemade BBQ recipe. You can also use store bought to make this recipe super, super quick. But, you all know I love homemade everything and encourage everyone to try it! I SUPPORT YOUR CREATIVITY! Same goes for the quick slaw. Make it homemade with the recipe below, or if you can find a premade option, do your thing! Either way, it's a great addition to this saucy sandwich to add a bit of a crunch and some greens. 

For the jackfruit, I like canned jackfruit. Jackfruits can be intimidating and this takes that factor out of it. All you have to do it shred it up. Using your fingers makes this task super quick and efficient. Get the family involved! It's fun!

BBQ Pulled Jackfruit Sandwich

BBQ SAUCE 

1/2 cup Ketchup or Tomato Paste 

1/2 cup Tangy BBQ Coconut Aminos

1/4 cup Apple Cider Vinegar 

2 tablespoons Dijon Mustard

2 garlic cloves or 1 tablespoon garlic powder 

1 tablespoon onion powder

1 tablespoon ancho chili powder 

1/2 teaspoon smoked paprika 

1/2 teaspoon cumin

1 tablespoon coconut sugar or maple syrup

pinch of salt and pepper 

JACKFRUIT

1 small yellow or white onion 

1ish tablespoon olive oil

1 20 oz can jackfruit, drained 

pinch of salt and pepper

SLAW

1 cups shredded cabbage, green and purple

1 cup kale, sliced thin

1/4 cup cilantro and/or parsley, chopped

1ish tablespoon olive oil

juice of 1 lemon or lime

pinch of salt and pepper

SERVING

4-6 buns 

Condiments: pickles, (spicy) mayo, mustard, etc. 

1. To make BBQ sauce, place all ingredients into a bowl or blender. Whisk or blend until smooth. Set aside. 

2. To make slaw, combine cabbage, kale, cilantro, olive oil, citrus, salt and pepper to a bowl. Mix together. Set Aside. 

3.  To make jackfruit, drain and place into a bowl. With you fingers, pull jackfruit into shreds. This happens very easily with you fingers! In a large pan, sauté your onions in a little olive oil over low-medium heat until translucent and fragrant (about 7-10 minutes). Add pulled jackfruit into pan. Season with salt and pepper. Cook for another 5-7 minutes. If the jackfruit sticks at all, just add a little splash of water! Turn the heat down to low, add the bbq sauce (save a little for serving) and allow it to simmer for another 12-15 minutes. 

4. To serve, toast your buns so they hold up well to the Pulled Jackfruit. Assemble with jackfruit, slaw and any condiments!
