Coconut Crusted Fish Tacos with Strawberry Salsa
Taco Tuesday?! Cinco de Mayo?! The perfect healthy and delicious, quick and simple taco recipe. Oven baked crusted fish nuggets topped with a 5 ingredient strawberry salsa with a twist of juicy lime.. Mmmmm.
This salsa though. Game changer. It's refreshing and bright with a hint of sweetness from the strawberries. Spring time is the beginning of strawberry season, folks. They're vibrant, red and extra sweet. Get those strawberries between April and July. Strawberries are jam (ha!) packed with Vitamin C and K and fiber-rich with lots of heart-healthy antioxidants. These little juicy gems are also great for hair, skin and bone health.
Oven baked crusted fish.. so simple to make and it's so good. You can even eat these as is. Fish nuggets and ketchup (strawberry ketchup!) for the kids. Cut the fish into cubes, dip into eggs then into panko mixture and bake for 20-25 minutes. While those are baking, make your salsa and set aside. When the fish is done, you're ready to serve.

Coconut Crusted Fish Tacos with Strawberry Salsa
2 fillets fish, your choice
1 egg
1/2 cup panko
1/4 cup coconut flakes
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon pepper
1 teaspoon salt
1 cup strawberries (or 1 package), diced
1/4 to 1/2 of a red onion, diced
cilantro, to taste
1 lime, juiced + more for serving
optional toppings: avocado, sour cream, etc.
1. Preheat oven to 375F. Cut your fish fillets into nuggets or cubes. In a bowl, crack your egg and whisk. In another bowl add panko, coconut, garlic powder, paprika, salt and pepper. Line a baking sheet with parchment paper.
2. Take your fish and one at a time dip all sides into egg mixtures, then dip all sides into panko mixtures pressing the mixture into the fish to ensure it sticks. Place your fish onto baking sheet and repeat with all pieces. Bake for 20-25 minutes or until golden brown.
3. While fish is baking, make your salsa. Combine your diced strawberries, diced red onion, cilantro and lime juice. Set aside.
4. When fish is done, you're ready to serve! Load your tortillas up with fish and salsa and a twist of lime. Enjoy!
