Cucumber Water and Mint Mocktail
Cheers to it almost being Summer time! And, do I have a treat for you! As you may or may not know, I live a substance free lifestyle. And, sometimes drinking 892374 La Croix's can get borrrrinnnggg. I wanted to make some fun drinks that anyone can have! Switch it up a bit. So, I have a cucumber water and mint mocktail. It's made with only a couple of ingredients in the blender and I looooove it. Keepin' it simple. Extremely refreshing, fizzy and yummy. Finish it with a sugar rimmed glass to feel fancy AF.

The cucumber water is a couple of peeled cucumbers, a hefty handful of mint and water. Blend that up completely. Add to a glass with ice, finish with either sparkling water or ginger beer. I tried it with both, and it's delicious either way. You can add a twist of lemon or lime, maybe even some jalapeños for a spice. I kept it really basic for you so you can get as creative as you'd like. I've said it before and I'll say it again, always use recipes as a baseline. Whatever you're deciding to make at home, make it yours. Use these recipes as a base, and change, add, substitute anything to make it your own. I 1000% encourage your creativity! As you know, summer is theeeee time to load up on cucumbers. They're fresh, in season, and so versatile. They are a great source of hydration, high in nutrients, and are great for your skin too. Blend them, juice them, can them, pickle them, add them to salads, sandwiches, and more! But first, make this mocktail. Promise you'll love it.

Alriiiiight, here's the recipe:
Cucumber Water and Mint Mocktail
2 cucumbers, peeled and sliced
3-4 cups cold water
a hefty handful of mint, to taste + more for serving
sparkling water, ginger beer or club soda, to finish
ice, for serving
optional:
1 lemon or lime, juice & zest
1 jalapeno, seeded
1 tablespoon honey, maple syrup or sugar
1. In a blender add cucumbers, water and mint. If adding citrus, jalapeño or sweetener, add now. Blend completely. If you're not into pulp, strain and set aside.
2. Fill a glass with ice and extra mint, fill half the cup with cucumber water and top with ginger beer or sparkling water. Serve and enjoy!
