Lazy Day Gnocchi Pizza Bake
Whhhewww, well we made it through 2020. It's like an extended emotional hangover.. and then.. there was 2021. I'm not sure about you, but I've been getting down with super quick, lazy dinners lately. Nothing fancy, but everything delicious. I am always for homemade.. but, sometimes homemade can mean cutting some corners. It's still homemade. It's still delicious. It's just extra simple, thanks to some pre-made friends.
Okay, but WHEN I buy pre-made, I make sure it's good quality. I still support local, wherever and whenever I can. And, if possible, supporting small businesses.. yes, even with food! Okay, rant over.
For this recipe, it really only takes about 4 items: pre-made gnocchi, pre-made sauce, cheese and pepperoni. Yes.. that is it! Boil the gnocchi for a couple of minutes, dump everything into an oven safe pan, bake and serve. The fun part about this, is you can get creative. Use tomato sauce, marinara sauce, pomodoro sauce, or arrabbiata sauce. Use mozzarella cheese, ricotta, goat cheese, pecorino, or asiago. Use pepperoni, capocolla, or salami. This dish is SO simple, you can get as creative as you want with the little ingredients that are used.

Lazy Day Gnocchi Pizza Bake
1 lb pre-made gnocchi
1 jar pre-made pasta sauce, your choice (usually around 24 oz)
- marinara, pomodoro, arrabbiata, tomato, etc.
1 cup cheese, your choice
- mozzarella, ricotta, goat cheeses, pecorino, asiago, etc.
6-12 slices of meat, your choice
- pepperoni, capocollo, salami, etc.
fresh herbs for garnish, optional

1. Preheat oven to 350F degrees. In a large pot, bring water to a boil and cook gnocchi as instructed on the box. A good rule of thumb: when the gnocchi floats at the top of the pot, it's done.
2. While the gnocchi boils, in an oven safe skillet add your pasta sauce and place the skillet over low-medium heat. Heat until bubbling/simmering. Drain and add gnocchi straight into the skillet. Toss in the sauce until fully incorporated. Turn off the heat, top with cheese and meat. Bake for 25-30 minutes.
3. Garnish with herbs, serve and enjoy!
