Overnight Chia Oats with Fruit Puree
This is your make-Sunday-night-for-the-rest-of-the-week type of recipe. I make sure to always have this in my refrigerator for a quick breakfast or a perfect pick-me-up snack. Healthy, filling and delicious. Best part, it can be made with just 3 ingredients: chia seeds, rolled oats & milk. And, doesn't even require cooking!
Paired with a bright fruit puree. Topped with nuts or granola, like my Chunky Strawberry Granola. Add turmeric for a pop of color and spice, cocoa powder for your sweet tooth, vanilla or honey for extra sweetener and flavor.. the possibilities are endless.
Use this recipe as a base and have fun with the flavors, spices, jams, and toppings. As different fruits come in to season throughout the year, you can swap and try new purees. I used plums for this puree and added turmeric to my chia & oats for that vibrant color pop! Have fun with this one friends and make sure to tag me when you make it -
Alriiiight, enough chatting. Here's your recipe:
Overnight Chia Oats with Fruit Puree
1 cup rolled oats
4 tablespoons chia seeds
3 cups milk of choice, my favorite is oat milk or coconut milk
1/2 teaspoon turmeric, or spice of choice
1/2 teaspoon cinnamon, or spice of choice
1/2 teaspoon vanilla extract
2-3 plums, or any fruit of choice - remember to remove the pits :)
1 tablespoon honey
1 teaspoon grated ginger
1 lemon, zest and juice
optional toppings: nuts, granola, yogurt, all of them!
1. Mix the oats, chia seeds and milk together. Let it sit in the fridge for at least 2-3 hours, or overnight.
2. To make fruit puree, put fruit, honey, ginger, lemon zest & juice in a blender. Blend until pureed. Put into container and chill.
3. To serve, put a couple tablespoons of puree at the bottom of serving dish or cup, followed by some of the chia oat mixture and top with nuts, granola, yogurt or all of the above!
