Grilled Peach and Burrata Salad with Crispy Prosciutto
Mmmm, peach season! In Colorado, we are spoiled with Palisade Peaches. Large, extra juicy, and so sweet. This recipe is all about these gems. With the addition of creamy burrata, crispy and salty prosciutto, and drizzled with thyme honey. You can't go wrong. You hit all the flavors and textures with this one. A perfect meal or side dish for your summer grill out.
Grilling the peaches brings out the natural sugar and makes for a super juicy bite. I try to find peaches that are almost ripe. When you gently squeeze it with your fingers, it should give a little but not puncture or bruise. Almost like a tennis ball. These will hold up best on the grill or grill pan. I use just a touch of oil on the grill or grill pan, slice the peaches and grill for about 5 minutes of each side or until there are visible grill marks.
For the prosciutto, place your slices on a baking sheet and stick it under the broiler for 5-10 minutes. Watch closely because the broiler works quickly! The thyme honey is just thyme leaves in some honey, give it a stir and you're done. Doesn't sound like much, but truuuust me it's a delicious touch to the dish.
To plate, add your grilled peaches, a couple pieces of opened burrata, scatter the crispy prosciutto around evenly and drizzle with your thyme honey. Add a little drizzle of extra virgin olive oil, salt and pepper to the burrata. Add some extra thyme for garnish. Fin.

Grilled Peach and Burrata Salad with Crispy Prosciutto
4 peaches, pitted and sliced
1 tablespoon olive, avocado or coconut oil, for grilling + more for garnish
1-2 burrata, 8 oz ball or 2 4-oz balls
2.5 oz prosciutto, about 4-6 slices
2 tablespoons honey
1 teaspoon thyme, plus more for garnish
salt and pepper, to taste
1. Preheat broiler on low. On the grill or a grill pan, lightly oil and add sliced peaches. Cook on low-medium heat for about 10 minutes, flipping halfway through.
2. While the peaches are grilling, put prosciutto onto baking sheet and cook under broiler for about 10 minutes. Watch closely as the broiler works fast!
3. To make honey, add thyme to honey and mix. Set aside.
4. To serve, add grilled peaches. Break open burrata ball with hands or a knife and place on the serving platter with peaches. Spread crispy prosciutto evenly over peaches. Drizzle everything with thyme honey. Add a drizzle of oil, salt and pepper to the burrata. Enjoy!
