Shaved Brussel Sprout and Kale Strawberry Salad

The perfect big bowl salad for a beautiful sunny spring or summer day! Crisp and refreshing, a hint of sweetness from the strawberries and a subtle spice with my 4-ingredient Apple Cider and Turmeric Vinaigrette. Go ahead and leave this veggie only, or add grilled chicken or fish for added protein. All of this can be thrown together in just minutes with my prep ahead tips & tricks. 

Ting's Tips & Tricks: 

1. As soon as you buy kale, wash and chop it up and put in individual containers. You can use it for salads, soups, sautés. You can also freeze half of it for smoothies, soups and more! 

2. As soon as you buy brussel sprouts, you can do the same. I wash and cut half of mine in halves for roasting. The other half I will shred for salads, slaws, sautés, pastas, roasting and more! 

3. My 4-ingredient Apple Cider Vinegar and Turmeric Vinaigrette is great to just keep on hand. Double or even triple the batch, keep in a mason jar in the refrigerator. When you need it, shake and pour.  

4. If you are a meal prep-er, grill up some protein at the beginning of the week to add to bowls, salads, or for snacking. Whether it's tofu, chicken, fish - you can have it ready to go when you need it! 

5. Onions are a staple item when I take a trip to the grocery store. I usually have at least 1 yellow onion and 1 red onion, or a shallot. They keep out on your counter for a good couple of months, sometimes more during the winter time. If you only need to use a quarter of an onion or half an onion, dice and/or slice the other half and keep it in the refrigerator or freezer for later use. Onion is used as a base for so many recipes, so it's great to have on hand and ready to be thrown into any dish! 

With these tips & tricks, this salad can be thrown together within minutes. Especially if you have a busy schedule, these little tips will go a long way.

Shaved Brussel Sprout and Kale Strawberry Salad 

1 cup kale, chopped

1 cup brussel sprouts, shaved or grated 

1/2 - 1 cup strawberries, quartered 

1/4 - 1/2 of a red onion, sliced 

1/4 cup feta, optional 

optional protein: grilled chicken, salmon, 


1/4 cup Apple Cider Vinegar 

2-3 tablespoons honey 

1 teaspoon turmeric 

1/3 cup olive oil 

optional: 1 teaspoon ginger

1. Make the vinaigrette. Add apple cider vinegar, honey and turmeric to bowl. Whisk until combined. Slowly add in olive oil and whisk until combined. If using a mason jar, add all of the ingredients to a mason jar and shake it up for 30 seconds! Set aside. 

2. Add kale and brussel sprouts to a bowl and add half the vinaigrette. Massage (yes, like with your *washed* hands) it into the kale and brussels. Add strawberries, onion and the rest of the vinaigrette. Toss and add any optional toppings, such as protein or feta cheese. Serve and enjoy!
