Valentine's Day Charcuterie Board
Hi lovers, singles and friends! Valentine's Day, Galentine's Day, Single's Awareness Day.. whatever it is to you - I got the perfect addition for YOUR day. This fun little assembled dessert platter can be modified and created to exactly what you crave and love. I'm just here to show you how easy it is! And adorable. Not much of a baker? Store bought will do the job. It's all about the presentation that matters, right? Right.
Once a month I make a simple, homemade batch of cookie dough and roll it up into a log and stick it in the freezer for nights when I have a sweet tooth, need a homemade gift, or just so happen to be making a dessert charcuterie board. Storing it this way allows you to bake 2 cookies at a time if you want a little dessert or the entire log. Depends on the day.. I get it. I use bread flour in these cookies, which is totally optional. But, I love a good chewy cookie. Bread flour gives the cookie more of a bite and under baking the cookie by a minute or two makes for the perfect soft, chewy cookie. Decorations are up to you! Whether you're into making homemade royal icing or store bought, this part can be a fun activity for you and your partner or friends to do together.
I got strawberries and sandwich cookies, melted some chocolate and dipped and decorated. I bought some raspberries and blackberries, because they are our favorite. I also bought some dark chocolate bars, because they were on sale.. and a perfect pairing with blue cheese. Dark chocolate and cheese go extremely well together! Note: usually items that are most popular around a specific holiday will be on sale a week prior. Keep an eye out at the markets for these great deals!
Below, I will have the simple cookie recipe. This charcuterie board was totally modified to what my boyfriend and I like. You can have so much fun with this board and design it, decorate it and enjoy it however you like! It's a fun date night activity and addition to a romantic evening. You can also add one of our homemade candles to the mix to make it extra special. We use our Rosemary, Sage and Myrrh or Calm the Dragon candles for our date nights. Chewy White Chocolate & Walnut Cookies
2 1/2 cup bread flour
1 teaspoon baking soda
1 teaspoon salt
1 cup softened or melted butter
1 cup brown sugar
1/2 cup sugar
1 egg
2 teaspoons maple syrup
1-2 cups chocolate chips
1 cup walnuts, optional
(Use 2 cups of chocolate chips if you won't be using nuts, 1 cup if using nuts)
1. Combine flour, baking soda and salt. Add butter and mix until incorporated. Add brown sugar, sugar, egg, maple syrup and mix until smooth. Add chocolate chips and nuts.
2. If using right away, cook for 8-10 minutes at 350 degrees. If storing for later, put dough onto wax paper and form into a long log. Put in freezer. Cut, slice and bake from frozen when you're ready to enjoy.
Chocolate Covered Sandwich Cookies
1 lb white, bittersweet or dark chocolate, chopped
2 tablespoons oil or butter
1 package of sandwich cookies
1. Put parchment or wax paper down onto a cookie sheet. Place the chocolate and oil into a glass bowl and place over a pot of boiling water. Stir until melted and smooth. If you have a microwave, you can just throw it in the microwave until melted. I recommend doing this about 30 seconds at a time, take out and stir and repeat until melted and smooth.
2. Take 1-2 cookies at a time and place in the bowl, coat on both sides and remove with a spatula (or your fingers) and place onto the parchment or wax paper. Repeat until all cookies are coated. Decorate with sprinkles, dried fruit, shaved chocolate, etc. Leave out to dry for a couple of hours or put in the refrigerator/freezer for quick hardening and long term storage. Enjoy!
Chocolate Covered Strawberries

1 package of strawberries
1. Wash and dry strawberries. Place the chocolate and oil into a glass bowl and place over a pot of boiling water. Stir until melted and smooth. If you have a microwave, you can just throw it in the microwave until melted. I recommend doing this about 30 seconds at a time, take out and stir and repeat until melted and smooth.
2. Hold the tops of the strawberries and dip into chocolate. Place on parchment or wax paper. Decorate with sprinkles, dried fruit, shaved chocolate, etc. Leave out to dry for a couple of hours or put in the refrigerator/freezer for quick hardening. Enjoy!
